Description
(Solanum aethiopicum). A favorite traditional vegetable of Ghana, as well as other parts of Africa, it is a staple in home gardens and kitchens. The lightly bitter flavor and exceptional nutritional value of African White eggplant make it a must for soups, stews, and stir fries, and the immature fruit can be eaten raw. Its history in Africa can be traced back more than 500 years. Prolific and easy to grow, the plant can reach 3 to 5 feet tall. As it matures, the fruit develops from white to yellow and finally red and can be eaten at any stage. Many Ghanaians use it in almost every meal!
Growing Tips: African White eggplant is a vigorous, heat-tolerant heirloom variety prized for its small, round, ivory-colored fruits and mild, slightly nutty flavor. Native to tropical Africa, it thrives in warm, sunny climates with rich, well-drained soil. Regular watering, mulching, and ample sun encourage strong growth and continuous fruiting. It’s also highly ornamental, with glossy leaves and abundant clusters of bright white fruit.
