EGGPLANT ILLIKOMBAN

(Solanum melongena). A rare treasure, as long as an elephant tusk yet as slender as a snake, this incredible emerald green Indian eggplant easily reaches impressive lengths of 2 feet and over. This elongated, slinky fruit was found growing exclusively in Onattukara, South Kerala, a land that’s renowned for its serene mangrove backwaters, agricultural abundance, ancient temples, and rich cultural heritage. The local name ‘Illikomban’ translates to ‘long brinjal similar to elephant tusk,’ and this variety sure does live up to its name. In the kitchen, this eggplant is the perfect option for curries and stir fries, boasting a sweet nutty flavor and a fabulous silky texture that cooks quickly and absorbs bold flavorings.
